Ingredients
- 1 pound of Mountain View smoked sausage (any flavor)
- 3 tablespoons of vegetable oil, divided
- 3 eggs
- 1/4 cup of chopped carrots
- 1/4 cup of peas
- 4 cups of white rice, cooked
- 1/4 cup of soy sauce
Directions
Add 1 tablespoon of vegetable oil to a skillet and turn to medium-high heat. Brown the Mountain View sausage on each side. Set aside.
In the same skillet, scramble the eggs. Set aside with the sausage.
Add 1 – 2 tablespoons of oil and cook the carrots and peas for 1 -2 minutes until softened.
Turn down to medium heat. Add the soy sauce and rice to the skillet. Stir well until all the ingredients are mixed well.
Add the eggs and sausage back to the skillet. Stir well. Serve warm and enjoy!
