Made with Mountain View Meats Queso smoked sausage.
Ingredients:
- 12-15 mini sweet peppers, halved & seeded
- 3 sausages (about 12 oz total), diced
- 4 oz cream cheese, softened
- 2 green onions, finely chopped
- 3/4 cup shredded cheese (plus extra for topping)
- 1-2 tbsp cilantro, chopped (optional)
Instructions:
- Preheat oven to 375°F.
- Cook diced sausage in a pan over medium heat until browned. Let cool slightly.
- In a bowl, mix sausage, cream cheese, green onion, and shredded cheese until combined.
- Stuff mixture into halved peppers.
- Bake for 15 minutes.
- Top with extra shredded cheese and bake another 5-10 minutes until melted and bubbly.
- Finish with cilantro (optional) and serve warm.
