Mini Sausage Stuffed Peppers

Made with Mountain View Meats Queso smoked sausage.

 

Ingredients:

  • 12-15 mini sweet peppers, halved & seeded
  • 3 sausages (about 12 oz total), diced
  • 4 oz cream cheese, softened
  • 2 green onions, finely chopped
  • 3/4 cup shredded cheese (plus extra for topping)
  • 1-2 tbsp cilantro, chopped (optional)

 

Instructions:

  1. Preheat oven to 375°F.
  2. Cook diced sausage in a pan over medium heat until browned. Let cool slightly.
  3. In a bowl, mix sausage, cream cheese, green onion, and shredded cheese until combined.
  4. Stuff mixture into halved peppers.
  5. Bake for 15 minutes.
  6. Top with extra shredded cheese and bake another 5-10 minutes until melted and bubbly.
  7. Finish with cilantro (optional) and serve warm.
