Ingredients:
- 1 package smoked sausage (sliced into thick diagonal pieces)
- 3-4 cups frozen tater tots
- 4-6 eggs
- 1-1 1/2 cups shredded cheddar cheese
- 1-2 tbsp oil
- Salt
- Black pepper
- Garlic salt
- Paprika
Optional Toppings
- Diced tomatoes
- Avocado slices
- Green onions
- Hot sauce or sour cream
Instructions:
- Preheat oven to 425°F and line a sheet pan with parchment paper.
- Add tater tots and sliced sausage to the pan. Drizzle with oil and season with salt, pepper, garlic salt, and paprika. Toss to coat evenly.
- Spread everything into a single layer and bake for 15 minutes, until the tots are golden and the sausage is lightly browned.
- Remove from the oven and create small open spaces between the tots. Crack eggs directly onto the pan, season lightly and sprinkle shredded cheese over everything.
- Return to the oven and bake for 5-8 minutes, depending on how you like your eggs.
- Optional: Broil for 1-2 minutes for extra crispiness and melted cheese.
- Top with diced tomatoes, avocado, or your favorite toppings and serve warm.
