Ingredients
- 1 lb Brussels sprouts, trimmed and halved
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red bell pepper, chopped
- 1/2 red onion, sliced
- 1 cup baby potatoes, halved
- 12-14 oz sausage, sliced
- 2-3 tbsp olive oil
- 1 tsp garlic salt
- 1 tsp paprika
- Black pepper to taste (optional)
Instructions
- Preheat oven to 425° and line a large sheet pan with parchment paper.
- Add Brussels sprouts, zucchini, squash, peppers, red onion, baby potatoes, and sliced sausage to the pan.
- Drizzle with olive oil and season with garlic salt, paprika, and black pepper. Toss everything together until evenly coated.
- Spread into a single layer so the vegetables roast evenly.
- Roast for 30-40 minutes, stirring halfway through, until vegetables are tender and sausage is browned.
- Serve warm and enjoy.
