Sausage veggie sheet pan

Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, chopped
  • 1/2 red onion, sliced
  • 1 cup baby potatoes, halved
  • 12-14 oz sausage, sliced
  • 2-3 tbsp olive oil
  • 1 tsp garlic salt
  • 1 tsp paprika
  • Black pepper to taste (optional)

 

Instructions

  1. Preheat oven to 425° and line a large sheet pan with parchment paper.
  2. Add Brussels sprouts, zucchini, squash, peppers, red onion, baby potatoes, and sliced sausage to the pan.
  3. Drizzle with olive oil and season with garlic salt, paprika, and black pepper. Toss everything together until evenly coated.
  4. Spread into a single layer so the vegetables roast evenly.
  5. Roast for 30-40 minutes, stirring halfway through, until vegetables are tender and sausage is browned.
  6. Serve warm and enjoy.
