Ingredients
- 12 oz angel hair pasta
- 1 package Mountain View Queso Smoked Sausage, sliced
- 2 cups broccoli florets
- 1–1½ cups grape tomatoes, halved
- 2 cups marinara sauce
- Fresh parsley, chopped (for garnish)
- Olive oil
- Salt & pepper, to taste
Instructions
1. Cook the pasta: Bring a large pot of salted water to a boil. Cook angel hair pasta according to package directions. Drain and set aside.
2. Sauté the sausage: Heat a drizzle of olive oil in a large skillet over medium heat. Add sliced Queso Smoked Sausage and cook until lightly browned and heated through.
3. Add the veggies: Toss in broccoli florets and cook 3–4 minutes until tender-crisp. Add grape tomatoes and cook another 1–2 minutes until slightly softened.
4. Sauce it up: Pour in marinara sauce and simmer for 3–5 minutes, allowing flavors to come together.
5. Combine & finish: Add cooked pasta to the skillet and gently toss to coat. Season with salt and pepper as needed.
6. Serve: Finish with fresh chopped parsley and serve warm.
