Sweet honey, hearty veggies, and a kick of heat from Mountain View Meat Company Ghost Pepper Sausage—an easy crockpot dinner that practically cooks itself.
Ingredients
- 1 package Mountain View Ghost Pepper Sausage
- 1 lb. yellow potatoes, halved or quartered
- 2 cups green beans, trimmed
- 3 carrots, sliced into chunks
- 1 purple onion, sliced into wedges
- 2 tablespoons honey
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Prep the sausage
Slice the Ghost Pepper sausage into thick rounds (about ½ inch). - Add to crockpot
Place the potatoes, carrots, green beans, and onion into the crockpot. Add the sliced sausage on top. - Season
Drizzle honey over everything, then sprinkle with salt and pepper. - Toss lightly
Gently mix so the vegetables are coated. - Cook
Low: 6–7 hours
High: 3–4 hours
Cook until the potatoes and carrots are tender. - Serve
Give everything a quick stir before serving so the honey and sausage juices coat the vegetables. Serve over rice, with crusty bread or by itself for a lower carb option.
Hot Tip !
If you want a little more glaze, drizzle another teaspoon of honey right before serving to balance the ghost pepper heat.
