‘The Queso Dog’ Breakfast Hash

This hearty breakfast is so simple and flavorful thanks to Mountain View Meats’ “The Queso Dog” smoked sausages. Slightly peppery with the perfect level of heat to create a truly crave-worthy breakfast.

Serves 6-8



  • 1 lb Mountain View Meats Queso Dog sausage, sliced ½”
  • 1 lb Yukon gold potatoes, boiled and diced ½”
  • ½ lb sweet potatoes, boiled and diced ½”
  • 1 white onion, ½” dice
  • 1 red bell pepper, ½” dice
  • 1 green bell pepper, ½” dice
  • 3 T cooking oil
  • 4 eggs, cooked to preference (poached, sunny-side up or soft-boiled are delicious for this recipe)
  • 1 cup sharp cheddar, grated
  • 3 green onions, sliced
  • Hot sauce to taste



Preheat the griddle (or a large skillet) to medium-high. Heat oil over the griddle surface and add diced onions and peppers, cooking until slightly golden and tender.

Add diced (pre-boiled) potatoes and continue cooking, stirring occasionally to prevent scorching, until the edges are golden and crisp (5 minutes).

While the vegetables are cooking, add the sliced Queso Dog sausage to a clear area of the hot griddle and cook until the edges are caramelized and golden.

Once the vegetables and sausage are golden and the edges are crisp, combine it all into one area of the griddle, stirring so that the HASH is evenly incorporated.

To serve, top hash with your favorite cooked egg, sprinkle with a dash of hot sauce, and enjoy!
