Shrimp and Sausage Gumbo

  •  2 tablespoons oil
  • 16 oz Mountain View Meats Mild Smoked Sausage, sliced
  • 1 cup butter
  • 1 cup flour
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 3 stalks celery, diced
  • 6 garlic cloves, minced
  • 1 tablespoon Cajun seasoning
  • 14 oz diced tomatoes
  • 8 cups chicken stock
  • 2 bay leaves
  • 12 oz frozen okra
  • 1 lb shrimp, peeled and deveined
  • Rice, cooked
  • Green onions, chopped



Heat oil over medium heat.

Add sausage and cook until browned.

Remove sausage from the pot and set aside.

Melt butter in the pot and add the flour.

Whisk or stir constantly for 20-30 minutes until roux is a deep golden brown.

Mix in the onion, bell pepper, celery and garlic and cook for about 5 minutes.

Add sausage, Cajun seasoning, tomatoes, chicken stock and bay leaves.

Heat to a simmer and cook, uncovered, 45 minutes,

Stir in okra and shrimp and simmer about 10 minutes until okra is tender and shrimp are cooked through.

Remove the bay leaves.

Serve with rice and sprinkle with green onions.
