Sheet Pan Hatch Chile Sausage and Veggies

When it comes to delicious meals, Mountain View Meats has got you covered. This sheet pan meal recipe is one of my favorite, quick ways to enjoy smoked sausage (and the Hatch Chile really brings the flavor!).

Serves 5



  • 1 package Mountain View Meats Hatch Chile Sausage
  • 1 lb diced butternut squash, 1/2 “ pieces
  • 1 lb Brussels sprouts, trimmed and quartered
  • 8 oz golden cherry tomatoes, halved
  • 2 T chopped parsley
  • 4 oz grated parmesan cheese
  • 1/2 medium red onion, sliced
  • 2 T oil
  • 1 t kosher salt
  • 1/2 t finely ground black pepper



Preheat the oven to 425°. In a large mixing combine squash, Brussels sprouts, parsley, cheese, onions and oil. Season with salt and pepper and pour out onto a prepared rimmed 15”x11” baking sheet.

Cook for 25 minutes, then arrange sausage links over the roasting vegetables and continue cooking for 10-12 additional minutes (until the sausages are heated through).

Serve immediately.
