Breakfast Burrito

This easy meal prep will be your new favorite breakfast!



  • Mountain View Mild Links
  • Chopped red, green, & yellow peppers
  • Chopped onion
  • Shredded hash browns
  • Eggs
  • Shredded cheddar cheese
  • Flour tortillas



In a large skillet start cooking the hashbrowns according to the package. In the same skillet, saute the pepper & onion mixture.

While the veggies and potatoes are cooking, remove the casing from the Mountain View sausage (optional).

Dice the sausages very small.

Remove the hash browns and pepper/onion mixture from the skillet and add in the mild links. Cook until heated all the way through.

With the sausage still in the skillet, pour in eggs that have been whisked. Let the eggs scramble.

Prepare the burritos by adding the hashbrowns, peppers, onions, eggs, and mild links onto a tortilla. Top with cheese. Roll up like a burrito. Place on skillet. Let the burrito brown, melting the cheese and getting the tortilla crispy to your liking.

Wrap the burritos individually into foil and freeze for up to 3 months. Pop one into the microwave for around 1-2 minutes anytime you want to enjoy a delicious and filling breakfast!
