Enjoy some spice with this delicious and easy-to-prepare dish.
Ingredients
- 1 8.5 oz can Jiffy cornbread mix
- 1 can whole kernel corn
- 1 can cream style corn
- 2 eggs
- 1/2 can chopped green chiles
- 1 8 oz carton of sour cream
- 2 Mountain View sausage links, sliced (we used the Queso flavor)
- 1/2 cup of freshly shredded American cheese
- 1/2 stick of melted butter
Instructions
Preheat the oven to 350 degrees.
In a large mixing bowl, stir together the cornbread mix, corn, eggs, chopped green chiles, sour cream, sliced sausage links, shredded American cheese, and melted butter.
Pour the mixture into a hot, buttered skillet and pop in the oven at 350 degrees for 45-60 minutes.
Optional Pulled Pork:
Season two pieces of cushion meat with your favorite BBQ seasoning. Place in a crockpot and pour in 8 oz of Dr. Pepper. Set on low for 6-8 hours until the meat easily shreds with a fork. Add in your favorite BBQ sauce and serve with a huge scoop of the cornbread casserole on the side!
