This Farro Salad is exactly why it’s always a good idea to grill enough sausages for leftovers. But it’s so good that you’ll want to grill Mountain View Meats Sweet Italian Sausage just for this recipe. Grilled sausages and a rainbow of summer-fresh chopped vegetables are the heart of this cool, flavorful summer salad.

Serves 8-10
Ingredients
- 1 lb Mountain View Meats Sweet Italian Sausage, grilled and ½” sliced
- 1 lb cooked farro, al dente
- 8 oz Italian salad dressing
- 8 oz castelvetrano olives, chopped
- ½ medium red onion, thinly sliced
- 4 oz pepperoncini peppers, sliced
- 8 oz cherry tomatoes, chopped
- 4 oz red radishes, sliced
- 3 green onions, sliced
- 2 T Italian parsley, finely chopped
- 2 oz sun-dried tomatoes, diced
- 8 oz broccoli, cut into 1” pieces and blanched
- 8 oz asparagus, cut into 1” pieces and blanched
Directions
Combine all ingredients in a large serving bowl, stir to combine.
Cover and cool in the refrigerator for 2-4 hours up to overnight. Stir and serve.
