Loaded Jalapeño Cheddar Sausage Fundido

Serves 6-8

 

Ingredients

  • 1 16 oz package Jalapeño Cheddar Sausage, sliced
  • 1 white onion
  • 1 red bell pepper
  • 1 jalapeno pepper
  • 2 T cooking oil
  • 2 oz heavy whipping cream
  • 12 oz Oaxaca cheese, 1/2” cubed
  • 12 oz Colby Jack cheese, cubed
  • 4 oz Queso Fresco, crumbled
  • Loaded Toppings
    • 1/2 avocado, diced
    • 2 T cilantro, finely chopped
    • 1 green onion, sliced
    • 2 T Pico de Gallo
    • 2 oz Queso Fresco, crumbled

Serve with chips or toasted baguette rounds

 

Instructions

Preheat oven to 400°.

In a large skillet, heat oil over medium flame, brown sausage with onions and peppers for 3-5 minutes.

Layer sausage, peppers and onions (in a 9”x2” buttered cast iron skillet) with cream and cheeses.

Bake for 20 minutes, just until melted. Top with ‘Loaded Toppings’ of your choice and serve with chips and toasted baguette rounds.

NOTE – do NOT over bake.
