Ingredients:
Green Chile Mayo

1/2 cup mayonnaise
- 4oz Hatch diced green chiles
Sandwich
- Butter
- Sourdough bread
- Pepper jack cheese, sliced
- Mountain View Meats Hatch Green Chile Sausage, butterflied and pan fried
- Cheddar cheese, shredded
- Green chile mayo, from above
Instructions:
Green Chile Mayo
Add mayonnaise and green chiles to food processor and blend until smooth.
Sandwich
Heat pan over medium heat and melt enough butter to coat the bottom of the pan.
Place a slice of bread in the pan and layer with pepper jack cheese, browned sausage, and cheddar cheese.
Drizzle with green chile mayo and top with a second slice of bread.
Cook until the bottom slice of bread is golden brown and crisp.
Flip and cook until the other slice is golden and the cheese is melted.
