2018 Hot Link Cookoff Champion: Mountain View Cajun Wontons

1 – 1 lb. package of Mountain View Cajun Style Andouille Sausage

12 oz. Crawfish Tails

2 – 8 oz. Cream Cheese (softened)

½ cup Green Onions (chopped)

1 Tbsp. Sugar

Daddy Hinkle’s Onion & Garlic Seasoning (to taste)

1 pkg. Wonton Wrappers

To make the filling: Remove casing from the links, dice into small pieces and add to a large mixing bowl. Dice crawfish into small pieces and add to the sausage. Add the cream cheese, green onions, sugar and seasoning with the meats and mix thoroughly until evenly distributed.

Using water, wet the edges of the wrappers, add filling and fold using the tri-fold method. Place wonton on wax lined cookie sheet and chill for at least 15 minutes or overnight.

Preheat oil to 350 degrees Fahrenheit. Place wontons carefully in oil and fry until golden brown – this should take only a minute or two. Serve with Yum Yum Sauce.

*Note: The wontons can be made in advance and kept frozen until ready to fry and serve – simply keep them in single layers of wax paper in the freezer. Perfect for any party or gathering!
