2017 Hot Link Cookoff Champion: Mountain View Mild Link Fajitas with Homemade Creamy Jalapeno Ranch Dressing

Fajita Ingredients:

1 package of Mountain View Mild Links

1 cup chicken broth

¼ cup olive oil

¼ cup red wine vinegar

¼ cup reduced-sodium soy sauce

¼ cup Worcestershire sauce

1 tbs each of dried basil, oregano, and thyme

½ tsp black pepper

1 green bell pepper

1 yellow bell pepper

Directions:

In a large resealable plastic bag combine broth, oil, vinegar, soy sauce, Worcestershire, herbs, and pepper. Slice links, peppers and onion, add to the bag. Seal bag and turn to coat the links, peppers and onion. Refrigerate for at least four hours. Drain marinade, reserving ½ cup. In a large nonstick skillet, cook links, peppers and onion in reserved marinade on med-high heat until sausage is heated through and vegetables are tender. Spoon link mixture into whole wheat tortilla, top with cheese and homemade creamy jalapeno ranch dressing.

Jalepeno Ranch Dressing Ingredients:

1 cup sour cream

1 cup mayonnaise

5 tsp dry Ranch dressing mix

½ cup pickled jalapeno peppers

½ cup fresh cilantro

1 fresh squeezed lime

Directions:

Wash and dry cilantro. Use only the tops of cilantro stem, discarding the majority of cilantro stems. Chop cilantro into coarse pieces. Place sour cream, mayonnaise, dry Ranch Dressing mix, jalapenos, lime juice and cilantro into a blender. Pulse 7 or 8 times and pour into bowl.
